A White Silver Dollar mushroom is essentially an oversized White mushroom. Its smooth rounded cap protrudes over its stout stem. Depending on when they are harvested they are either stark white in color or slighty brown blushed. Their flavor is mild when raw, becoming more fragrant and meaty when cooked.

White Garlic
Fresh garlic consists of several cloves that can be individually separated from their paper-thin white peel. Each clove of garlic is also encased in its own individual wrapper, often multi-layered depending upon variety. Jalapeño Peppers
Jalapeño pepper pods have a slightly curved, conical shape and come to a blunt end at their tip. A petite pepper on average they measure two to three inches in length and one inch in width. Their smooth, bright to dark green skin will ripen to a vivid red when the peppers are fully mature. More mature peppers will also exhibit characteristic cracks near their stem end. This streaking is also known as "corking" and is a pepper characteristic sought after in Mexico but not so much in the United States. The crisp and juicy flesh of the Jalapeno pepper offers a vegetal flavor and a spicy bite with heat increasing as the pepper peaks in maturity. When cooked the skin is edible making the squash ideal halved, baked and used as a bowl stuffed with meats, cheese, grains, soups, or other vegetables. Cooked Green acorn squash can be added to soups, stews, curries, risotto, and pasta. Puree and use in quick bread, cakes and pies. It's sweet squash flavor pairs well with balsamic vinegar, wild mushrooms, brown sugar, maple syrup, sage, thyme, rosemary, robust cheeses, curry, pecans, butter, dried cranberries, cilantro, ground beef, blackened chicken, sausage, and apple. Unlike many other winter squashes Green acorn squash are not the best squash to store long term. For best flavor and texture store uncut Green acorn squash in a cool, dry place and use within one month of harvest.

Squash can be sliced into rounds, wedges, or cubes and baked, steamed, roasted, braised, and grilled. Cooked squash makes an excellent addition to curries, chili, soups, stews, and risotto. Dice and use in lieu of potatoes in a hash or serve atop pizza and flatbread. Cooked squash can also be used as a filling for tacos, enchiladas, empanadas, and ravioli. Cooked and pureed Butternut squash can be used to flavor and thicken sauces and soups. The seeds of the squash are popularly roasted, salted and consumed as a snack food similar to pumpkin seeds. Its flavor pairs well with sage, thyme, bay leaf, apple, cinnamon, pear, shallots, pecans, butter, cream, feta cheese, ground beef, sausage, and bacon. An excellent keeper, to store keep Butternut squash in a cool, dry place and use within a few months.
Spaghetti Squash

Fresh from Yakima! Spaghetti squash has a hard rind and is sought after culinarily for its unique interior flesh which separates into pasta-like strings when cooked. Whole or halved Spaghetti squash can be steamed, baked, roasted or microwaved. Once cooked, the flesh can be shredded with a fork to make the stringy squash noodles the marrow is known for. Cooked Spaghetti squash can be sautéed with complimentary ingredients or added to casseroles, gratins, and bakes. Used as a pasta substitute, it can be topped with or tossed with sauces, vegetables, meats, cheeses, and herbs. Its flavor is so mild that it easily absorbs the flavors of that which it is prepared with. Complimentary ingredients include tomato, onions, garlic, greens, fresh herbs, cream, parmesan, mozzarella and feta cheese, ground beef, Italian sausage, and pancetta. Uncut Spaghetti squash will keep for a month at room temperature. Once cut squash should be kept refrigerated and wrapped in plastic. Cut squash is best used within two days.
