Pinot Noir originates in Burgundy, France, where it is found among the top-quality examples of Burgundy Red, which are Grand and Premier Crus cultivated by inherited knowledge and tradition over many generations. Despite the geographical limitations of its spread, the thirst for Pinot Noir is without borders. Oregon, California, Sancerre, and Alsace are some of the finest regions producing superb climate pinot noirs. A broad spectrum of notes and aromas have been used to describe the experience of tasting a classic Burgundy Pinot Noir: cherry, raspberry, strawberry in youth that evolve into earthy, vegetal, gamey notes when the wine matures. A standard description for a warmer climate Pinot Noir would include aromas like plums, cedar, cigars, and chocolate. The levels of tannins and acidity may vary from medium to high according to the growing region and vineyards, just like its color from light to medium intensity. Known as Cabernet Sauvignon's partner in crime, Merlot is a soft, fleshy and easy to grow grape that ripens easily, which makes it one of the world's most planted wine grapes. Right Bank Bordeaux is known for its red clay soils that produce bold plummy red wines with a dominance of Merlot. Cabernet Blends
Cabernet Sauvignon is the jetsetter of grapes. It travels all over the world, but being a late bloomer, it thrives in warm climates. When it matures, it is famous for intensity and depth of taste, balanced with a solid acidity due to gentle ripening. The tiny, thick skinned grape is packed with flavor, dark blue color and tannins. Grown all over the world, the flavors vary. In France, it is often blended with the softer Merlot or the cooler Cabernet Franc and is usually bit higher in acidity. In the Southern spheres, such as Chile and California, it is delicious on its own, and is known to be a tad bit fruitier. This area is known for its gravelly soils and graphite-driven red wines with a dominance of Cabernet Sauvignon in the blend.
