The Grapevine tradition started with the beliefs and dreams of one man, Michael J. Trak, "Chef Mike" (as his friends and
co-workers call him) came to America in 1971 with nothing more than a five-dollar bill, generations of family recipes in his pocket,
and a passion for the kitchen. He cooked, baked and sauteed his way through restaurant kitchens, never missing a single day of work.
Shortly after, in 1972, his wife Mary was followed, and joined him working side by side. Mary worked the dining room, greeting and
welcoming guests and made them feel right at home. At the same time, she perfected her delicious desserts, a perfect compliment to Chef
Mike's kitchen magic.
Chef Mike and Mary struggled to maintain through unimaginable number of hours over-coming language barriers as well as being in
an unformiliar location. Some of the restaurants that felt their positive influences were Shakey's Pizza, Maria's Restaurant and The Trak
Restaurant.
