About Us
On dimly-lit, roaring twenties evenings, a group of friends gathered at the original Blackstone Hotel for weekly poker games, spearheaded by hotel owner Charles Schimmel. They ordered stiff drinks, told loud stories, and dubbed themselves "The Committee." Our steakhouse borrows their name to inspire a new era of lively rendezvous and great dining. Experience playful contemporary touches to a classic steakhouse atmosphere at The Committee Chophouse, including tender aged beef and a custom Caesar Salad, made tableside to your taste.
