Ice Cream Sodas
Traditionally, an ice cream soda is made of carbonated water, flavoring, ice cream and possibly a nice dab of whipped cream.
Start with the chilled seltzer, filling to within 2 inches of the lip of the glass.
Add 2 tablespoons of syrup or flavoring.
Stir gently and leave a spoon and a straw in the glass.
Add 1 large scoop of very hard ice cream, straddling the rim of the glass while still submerging enough of the ice cream to begin reacting with the seltzer to create a foamy head.
If the ice cream is too deep in the seltzer, the soda will overflow.
Top the soda with a generous squirt of whipped cream.
Combinations for Ice Cream Sodas
The possible combinations for ice cream sodas are unlimited. Here are a few standard fountain recipes:
Black & White
Chocolate syrup, seltzer, vanilla ice cream.
Bodacious Black & White
Chocolate syrup, seltzer, French vanilla ice cream.
Canary Island Special
Vanilla syrup, seltzer, chocolate ice cream (also called the "White & Black").
Strawberry Soda
1/4 cup strawberry syrup, a splash of milk, seltzer and vanilla or strawberry ice cream.
The Maui
1/2 cup pineapple syrup, a splash of milk, seltzer, and chocolate ice cream.
Juice Spritzers
Spritz ¾ of a glass with seltzer, then add juice or syrup to taste.
Make your own wide variety of low calorie, natural beverages.
A Great Non-Alcoholic Mimosa
½ glass Orange juice
¼ Blood Orange Syrup
¼ Seltzer

Make eggs, omelets, pancakes and matzo balls fluffier and lighter by using seltzer in place of water or milk.

3 parts wine to 1 part seltzer
Salad Dressing
1 oz. oil
1 oz. balsamic vinegar
½ oz. syrup: raspberry, mandarin, or a flavor of your choice

Add 1 part cold Cran-Grape Juice to 6 parts cold seltzer. You will still taste the great fruit flavor, but instead of 150 calories per 8 oz. serving of juice, there will be only 25 calories!
Frog Lemonade
This delightful drink is named for the mascot of the Picayune newspaper in New Orleans, and a favorite of the paper boys of generations ago. Makes about 1 gallon.
Frog Lemonade - Ingredients
3 cups fresh lemon juice
1 cup sugar
1-1/2 cups pineapple juice
1 liter seltzer
18 strawberries
1 small pineapple, peeled, cored, and cut into pieces
2 lemons, sliced paper thin
1 block ice
crushed ice
Frog Lemonade - Directions
In a punch bowl, combine the lemon juice and sugar with 6 cups of water.
Stir until the sugar is dissolved.
Add the pineapple juice, seltzer, strawberries, pineapple pieces, and lemon slices.
Add a block of ice.
Fill each glass 1/3 full of crushed ice.
Pour in lemonade, making sure to include a strawberry, a piece of pineapple, and a lemon slice.
Sparkling Peach Pick-Me-Up - Ingredients
In blender, puree peach until smooth. Pour into tall glass, add seltzer. Enjoy!
1 fresh peach, quartered
10 ounces seltzer
New York Egg Cream
This is the famous New York "Egg Cream," made with Fox's U-bet Chocolate Syrup. When made correctly, it's a beautiful drink and deserves its own architectural rendering, which we have conveniently provided here! Click on the thumbnail to see a full-sized graphic of this classic.
Pour 3 oz. of cold milk into a glass.
Pour 2 oz. of Fox's U-bet Chocolate Syrup, without stirring.
Place a spoon in the glass and spritz in cold seltzer over the spoon handle and/or into the sides of the glass (to reduce excess foam) until the foam reaches just below the rim of the glass.
Stir gently at first, then more vigorously until the foam head is stabilized and the syrup is mixed thoroughly.
The drink should settle into several shades of light and dark chocolate.

Irish Cream - Egg Cream
Diane, one of our customers, reports making a fabulous egg cream with our Irish Cream syrup instead of chocolate syrup... Wow! It's really tasty!
Amaretto - Egg Cream
Try an egg cream made with our Amaretto syrup, my personal favorite.
Mint syrup in iced tea or lemonade
Now is the time to try our delicious Mint syrup, combined with all those fresh lemons in the market. When making iced tea or lemonade, try adding a half ounce of Mint syrup to your drink and you will feel like you' re in a southern town... enjoy!
Bren's Egg Cream - Ingredients
1/3 glass milk
Whole milk or half and half for best separation into layers.
2 tablespoons chocolate syrup
Preferably a thin one; Fox's U-bet brand is preferred, available from us.
2/3 glass chilled seltzer
Bren's Egg Cream - Directions
Pour the milk into a large soda fountain glass.
Add the chocolate syrup and stir gently, blending (leave some unblended chocolate at bottom of the glass - that's traditional!)
Slowly add the seltzer along the side of the glass and stir with your wrist. A foamy head will rise to the top.
Admire the color, and then drink immediately!
For more tingle and a higher head, use 1/4 cup milk and 3/4 cup of seltzer.
For a richer egg cream, use half milk and half seltzer.

Holiday Drinks!
Double Cranberry Sauce with Orange
1 bag fresh cranberries
1 orange, peeled and diced (no pith)
3 whole cloves
3 allspice berries
1 ¼ cups of sugar
2 oz. Philibert Routin Cranberry Syrup (about 12 pumps)
¾ oz. Philibert Routin Cinnamon Syrup (about 4 pumps)
Combine 1 ¼ cup of water, spices, sugar, and orange pieces into a medium saucepan and let cook over a low boil for 5 minutes.
Place the washed cranberries into the pan and cook over medium-low heat until cranberries begin to "pop" (about five minutes).
Add both syrups and heat gently until slightly thickened (about 3 minutes).
Let cool and refrigerate until needed. This delicious sauce can be used with any poultry or ham dish.
Spiced Pear and Orange Chutney
4 pears (slightly under-ripe), peeled, cored, and diced
2 oranges, peeled and diced (no pith)
4 whole cloves
4 allspice berries
1 cinnamon stick
¾ cup of sugar
1 ½ oz. Philibert Routin Caramel Syrup (about 9 pumps)
¾ oz. Philibert Routin Cinnamon Syrup (about 4 pumps)
Combine 1 cup water, the spices, sugar, and oranges into a medium heavy-bottomed saucepan.
Let the mixture come to a soft boil for about 8 minutes.
Add the pears and both of the syrups and continue to cook at the soft boil stage for about 25 minutes, stirring often, being very careful not to burn the mixture.
Once thickened, let the mixture cool and refrigerate until needed.
Spoon this chutney onto turkey, game, ham, or any roasted meat.
Cranberry Blast
1 oz. Philibert Routin Cranberry Syrup (about 6 pumps)
½ oz. Philibert Routin Lemon Syrup (about 3 pumps)
seltzer
orange slice
Pour both syrups into a glass, over ice.
Fill the glass with seltzer, stir, and garnish with an orange slice.

Fox's U-Bet Fountain Syrups
You may already know about the legendary Fox's U-Bet Chocolate Syrup.
It is essential to create an authentic Chocolate Egg Cream (there's no egg in it; that's "New Yorkian" for the French "Chocolate Crème"). It's a frothy chocolate milk beverage with beautiful color from a white top to a chocolate bottom.
We also offer Fox's U-Bet syrups in other great flavors:
