Made in the Andalucía region of Southern Spain, Sherry is a complex wine with a full spectrum of flavors from bone dry and slightly salty to copiously rich and sweet. Sherry is fortified with brandy and goes through a continuous blending with many other wine barrels known as a “Solera.” Finos, Amontillados and Palo Cortados spend a portion of their lives under a layer of yeast (called “flor”), protecting it from oxygen and adding yeasty character while Olorosos are in contact with oxygen their whole life.

Sauternes
This well known dessert wine comes from Bordeaux, France. Here, sémillon and sauvignon blanc grapes have their sugars and acidity concentrated when the fungus botrytis cinerea attacks. This phenomenon, known as Noble Rot, results in sweet wines of great complexity. Sauternes was part of the great 1855 classification of Bordeaux houses - Deuxièmes Crus Classés (Second Growths), Premier Crus Classés (First Growths) and a sole Premier Cru Supérieur (Superior First Growth)… Château d'Yquem.

A Hungarian sweet wine from botrytis affected grape varietals furmint and hárslevel?. Aszú is the sweet, concentrated juice from botrytized grapes and it is added to a regulated portion of base wine. The amount of Aszú in the final wine is measured from 1 to 6 puttonyos, with 6 puttonyos being the sweetest and richest. A wine over 6 puttonyos, with sugar levels of 180 – 450g/l, is called Aszú Essencia. Aszú Essencia is made only in the best vintages and ages very well.

Trockenbeerenauslese is made from the ripest grapes, all which have been effected by noble rot. Ice Wine
Wine made from frozen grapes. The frozen grapes are pressed and the ice removed, thus concentrating the flavors of the musts left over. The freezing can be achieved on the vine in very cold climates or you can simulate the same process by putting grapes in a freezer right after harvesting.

Sans bubbles, Ratafia comes direct from the Champagne region where neutral spirits are added to fermenting Champagne grapes, stopping fermentation and leaving some natural sugar. Monsieur Selosse went the extra mile, combining five vintages in a barrel and leaving it outside exposed to the elements for about 11 years, originally seeing if it would develop flor like a Sherry. Marsala
Marsala gets its name from the town in Sicily it surrounds. Marsala wines are fortified with alcohol. This was originally done for the wines to survive long voyages to England in the 1700’s. Not to be missed are the marsalas from Marco de Bartoli, perhaps the most innovative producer in the area.

Madeira
Made on the Madeira Islands, part of Portugal but far off its coast, Madeira wines were fortified and shipped across the world in the 1800’s. During this voyage the wines were exposed to the sun’s heat and ocean’s air, cooking and oxidizing the wine before it got to the new world. The resulting wine was very popular and now Madeira is intentionally heated and oxidized after fortification, producing flavors of dried fruits, nuts and caramel. The wines vary in sweetness. The Sercial grape produces the driest style, Verdelho medium dry, Bual medium sweet and Malvasia the richest. Terrantez tends to be medium dry but is not produced much today. Vintage Madeira aged more than 20 years in cask is called Frasqueira.

Port
Port is a fortified wine made in the Douro Valley in Portugal. It is made mostly with red grapes in a variety of styles but a small amount of white port is also produced. Ruby Ports are bright and fruity. Quality Tawny Port ages in wood for a period of time and oxidizes slightly resulting in lighter color wines with more nut and chocolate aromas than fresh berries. Colheita Port comes from a single vintage and is aged in wood (minimum 8 years) just before bottling. The resulting wine is similar to a Tawny Port but with more complexity. Vintage Port is bottled early (after just 18 months - 3 years) without filtering. It requires long periods of time in the bottle to go from full, rich and tannic to softer, more complex wines.
