Bulldog – Brown Ale (Champaign County Brewing Co – Mahomet, IL) 6% Dimpled Stein
This beer is named after the mascot at Mahomet-Seymour High School, our hometown team. JT Walker’s Restaurant & Brewery is giving a shout-out to all the alumni who ventured through the halls and poured their hearts out on the many different playing fields in search of victory. Bulldog Brown Ale is a smooth, easy drinking beer with multiple flavors. There are hints of caramel, chocolate, and toasted bread, with a mild hop aroma.
Orange & Blue – Belgian-Style Witbier (Champaign County Brewing Co – Mahomet, IL) 5% Tulip
The colors orange and blue are synonymous with this area, our local high school and the University of Illinois – Urbana-Champaign. Thus, we wanted to show our pride in everything that is orange and blue. Witbier is a light-colored wheat beer made with Belgian yeast that gives it subtle flavors of banana and clove. We add orange citrus and real blueberries. The smell of blueberry comes through in the nose, and the beer finishes nicely with a hint of orange peel in the end. The perfect thirst quencher during warm weather days.
Hale to the Chief – American IPA (Champaign County Brewing Co – Mahomet, IL) 7% Hourglass Pilsner
This is JT Walker’s Restaurant & Brewery’s flagship beer, and it is our pride and joy. It is named for the famed Iliniwek Indians that were the original inhabitants to this region of North America. As an ode to one of their most abundant crops, Hale to the Chief is brewed with portions of corn instead of just barely. Corn is clean, yet sweet. This IPA focuses on a nice hop and malt balance, but it has all of the bursting flavor and aroma that is expected from an American-hopped IPA.
47 & 74 – Scotch Ale (Champaign County Brewing Co – Mahomet, IL) 7.4% Snifter
Mahomet is located between route 47 and Interstate 74, and that’s where you will find JT Walker’s Restaurant & Brewery. We are just off the beaten path, but we are not that far away from anywhere in Central Illinois, so come on by. Brewed to be 47 IBU’s and 7.4% ABV, this beer is marked by a caramel sweetness with a nice roasted flavor. We took a bold approach with this beer adding a bigger hop profile than in your typical scotch ale in order to ease the sweetness and make this beer more multidimensional.
Nine Gals – Saison (Champaign County Brewing Co – Mahomet, IL) 5.5% Snifter
Nine Gal Tavern existed in Mahomet, then known as Middletown, in the mid-1800s and was colorfully named for the nine red-headed daughters of its proprietor. Saison is the French word for season. French and Belgian farmers would brew a crisp, drinkable beer ahead of time to be consumed by workers during the hot summer season. Saison styles are already famous for having spicy, peppery notes, and we have complimented that with pounds of real ginger root. Get your taste-buds ready, Nine Gals Ginger Saison is a beer all its’ own.
Bourbon County Stout 2013 – Imperial Stout (Goose Island – Chicago, IL) 15% 8oz Snifter
GooseIsland wanted to do something special for their 1,000th batch at the original brewpub. So they brewed a beer. A really big batch of stout – so big the malt was coming out of the top of the mash tun. After fermentation, they brought in some bourbon barrels to age the stout. After 150 days, Bourbon County Stout was born. A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla, caramel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. It also pairs great with a nice cigar on a cool evening.
Bourbon County Stout 2011 – Imperial Stout (Goose Island – Chicago, IL) 15% 8oz Snifter
This is your classic Bourbon County Stout, only we have been holding on to this one for a couple of years. The aging of the beer tends to mellow out some of the harsher bourbon flavors and really smooths out the nice malty backbone of this beer.
Matilda Lambicus – Sour/Wild Ale (Goose Island – Chicago, IL) 7% Pint
This version of the classic Matilda is made utilizing only the Brett Lambicus strain of yeast, which gives this beer a natural sour taste. This is a rare offering from Goose Island that is a must try for fans of sour ales.
Have your beer for breakfast! A coffee lover’s consummate beer, it’s brewed with an abundance of flaked oats, bitter and sweetened imported chocolates, and Sumatra and Kona coffee. An intense fresh roasted coffee nose topped with a cinnamon colored frothy head.
Guinness Draught (Nitro) – Dry Stout (Ireland) 4.1% English Tulip
This Irish dry stout is enjoyed the world over and brewed in over 150 countries. A dark stout with roasted flavors and a malty character.
Hop Slam – Double Imperial IPA (Bell’s – Kalamazoo, MI) 10% Hourglass Pilsner
Starting with six different hop varietals added to the brew kettle and culminating with a massive dry-hop addition of Simcoe hops, Bell’s Hopslam Ale possesses the most complex hopping schedule in the Bell’s repertoire. Selected specifically because of their aromatic qualities, these Pacific Northwest varieties contribute a pungent blend of grapefruit, stone fruit, and floral notes. A generous malt bill and a solid dollop of honey provide just enough body to keep the balance in check, resulting in a remarkably drinkable double IPA.
This English style of beer, also known as Sweet Stout or Cream Stout, first appeared in London in the late 1800’s. The early brewers touted the health benefits of the milk sugar in this beer which today relates mainly to the increased amount of calories (no real health benefits sorry). The milk sugar adds a well-rounded sweetness to this dark beer and makes it an outstanding, year ‘round stout.
PranQster – Belgian Strong Ale (North Coast – Fort Bragg, CA) 7.6% Snifter
Belgian Ales represent the height of the brewer’s art. Sophisticated brewing techniques, yeast blends, and unique flavoring elements have elevated the beers of Belgium to the status enjoyed by wine in other countries. PranQster follows in this tradition using a mixed culture of antique yeast strains that results in a floral nose, a full fruity flavor, and a clean finish.
This hoppy American IPA is a full bodied beer brewed American pale and crystalmalts, and heavily hopped with Chinook, Cascade, Columbus, and Centennial. There’s a trophy in every glass.
