a homemade buttermilk biscuit with Finchville Farms country ham and Spring Valley Farms blackberry preserves, a snow pea with herbed cream cheese and crushed walnuts, and a basil mascarpone filled strawberry with a balsamic pearl
Kit Carson Quesadilla
a delicate taste of the Southwest...black beans in a mild green chili tomato sauce blended with monterey jack cheese and cilantro, griddled in a corn tortilla and garnished with lime crema and sweet corn

Chicken Fontina de Luca
a boneless chicken breast topped with sautéed baby spinach, Parmesan and garlic, baked under Fontina cheese and topped with marinated sun-dried tomatoes and toasted pine nuts…served on a bed of capellini. Accompanied by a salad of red leaf lettuce, Mandarin oranges, rings of purple onion, English walnuts and poppyseed dressing
Seafood Paella
our version of a Spanish classic… plump steamed shrimp and sautéed scallops served on a paella of saffron rice, chorizo sausage, English peas, diced tomatoes and pearl onions… drizzled with lemon aioli and spiked with snow peas
