To provide the finest refined farm cuisine as possible by utilizing free-range, humanely raised beef and fowl; certified organic produce sourced exclusively from Jude Hollow Farm; sustainable seafood, both wild and farmed, that adheres to the strict guidelines of the Global Fish Alliance. Many of our herbs are grown on property in our elevated box herb garden. 100% of our used fry oil is made into bio-diesel fuel, and we have implemented a broad composting program to supplement our existing recycling plan to support our vision of a cleaner, greener environment.
