Over two decades ago a group of Nicaraguan friends living in Miami decided to create a restaurant that would feature the finest Nicaraguan dishes in an ambiance representative of its Spanish colonial architecture. It would be a place where people would be exposed to the Nicaraguan traditions of fine cuisine, personalized service and festive entertainment. In 1985 El Novillo Restaurant came to fruition and thus a Nicaraguan home was transformed into the premier Latin steakhouse.
