Inspired by the flavors of Provence, this saucisson is made with Jacuterie's own blend of Herbs de Provence, garlic, and black pepper. Jacuterie's European Style Salami are made slowly with traditional methods over the course of five weeks. They carefully select the best meat and then blend it with carefully measured spices, herbs, salt, and sometimes a splash of wine. The salami are given a short rest to allow the ingredients to marinate together. The Ancramdale based company then hang the salami in their curing chambers designed for four weeks until they are ready to eat.
