Goat Cream Cheese
From farm to cheese in less than 24 hours, our fresh goat cheese is spreadable, with a startlingly fresh taste and a sensually creamy texture. Using long set and drain times allows for a very bright, citrusy flavor to develop in the cheese. ingredients: pasteurized goat, cultures, goat kid rennet, sea salt

Liptauer
Every once in a while we taste something so unique and so remarkably flavorful that we just have to make some for ourselves, and we couldn't be happier or more excited to offer up this taste of Hungarian tradition. To make Liptauer (pronounced "lip-tower") we start with a base of our cream cheese, spice it up with fresh garlic, capers, toasted caraway and just a touch of anchovy. The most important feature of this cheese spread, however, is the paprika. We've been lucky enough to work with the Hodi family in Hungary, whose farmstead hot and sweet paprika takes this cheese to a whole new level. We use quite a bit more sweet than hot, giving our Liptauer a perfect balance of savory and spice. This spread is exceptionally complex, with a big burst of robust, unique flavor in every bite. Pimento Cheese
We make our pimento cheese spread with sharp, coarsely ground 1-year cheddar. To this we add some mayo, roasted piquillo peppers, cayenne, and a little salt and pepper to taste. The result is a chunky, slightly spicy, and thoroughly delicious cheese spread that has quickly become an Ann Arbor favorite. ingredients pasteurized cow's milk cheddar, piquillo peppers, mayonnaise, salt, tellicherry black pepper, cayenne pepper.

The City Goat
Hand ladling gives this cheese an amazing, evolving texture, from light and airy when very fresh to firm and perfect for crumbling when more aged. The cheese features a very bright, clean, and slightly citrusy taste that pops in a variety of presentations. Burrata
Burrata, meaning "buttered" in Italian, is one of the most decadent cheeses you can get your hands on. We make ours by freshly pulling mozzarella curd and forming it into a pouch. Then we fill that pouch with a mixture of shredded mozzarella and heavy cream for an extraordinary fresh cheese treat. Spiced City Goat Cheese
We make these soft, creamy, fresh goat cheese rounds with the best milk we can source from small Michigan goat farmers. Using low-temperature pasteurization allows us to preserve as much flavor as possible in the milk, a flavor which we intensify by letting this freshly pasteurized milk set overnight, maximizing its intensity. This fresh, delicately flaky cheese is made by gently hand-ladling cow's milk curd into perforated molds, which allows the whey to drain slowly, imparting a wonderful flavor to the finished round. Aged Cheeses
Manchester
The Manchester draws its origins from a soft-ripened double cream cheese along the Welsh-English border, but through process differences (both intentional and unintentional), no longer bears any resemblance to its very distant cousin. It beautifully showcases the seasonal nature and flavors of the local cow's milk used to make it. Detroit Street Brick
2006, 2007, 2012 American Cheese Society winner. The Detroit Street Brick draws its name from the famed brick street in front of Zingerman's Delicatessen. Lincoln Log
This dense, soft-ripened goat cheese is the creamery's take on the classic bucheron. Bridgewater Log
Made from the same base curd mixture as the 8-ounce Bridgewater, we created the Bridgewater Log at the request of our restaurant and catering clients. While the snowy white the original snowball-shaped Bridgewater is beautiful in a cheese case or on a platter, it's spherical structure is less practical on a larger scale. when you're only using a bit at a time. While that cute little snowball of a cheese looks great in a cheese case, if you're only using a bit of it at a time it tends to get a little difficult to work with. Showcasing the same luscious flavor profile of the original, the Log is easier to handle and also a bit denser in texture and facilitates easy slicing and serving. While the flavor profile of both formats of the Bridgewater is very much the same, we fell in love with how this sliced log looks on a charcuterie plate.

Our cheese shop (located a “scone’s throw” from Zingerman’s Bakehouse) features live cheese making and our own cheeses and gelati as well as great cheeses from around the world.
