Pu'er Smoked Duck
Our Pu'er Smoked Duck Family Feast features 3-pounds of Maple Leaf Farms' boneless duck breast. We brine the duck in salt, sugar and spices for 12-hours, then we cure for 24-hours to dry. To cook, we lightly smoke with Pu'er tea, then we simply glaze with sweet soy and confit in duck fat until skin is crispy. It is served with pan-fried buns, an assortment of fresh lettuces and herbs, Little 4 Sauce, spicy whipped tofu, sweet soy and chili oil. This dish is inspired by the many ethnic minorities of Yunnan who continue the shared tradition of eating with hands, and we encourage guests to do the same. Due to limited availability, we offer only one Pu'er Smoked Duck Family Feast nightly for dinner at 7:45pm

Purple Chicken Claypot
Our Purple Chicken Claypot Family Feast features organic, free range, heritage breed, Chinese purple "wu" chickens; two birds are served together due to their naturally small frame and lean meat. We brine the birds first in salt, sugar and spices for 24-hours, then lightly poach in reduced chicken broth. After cooling, we skim the rendered fat and finish poaching with seasonal veggies and aromatics. Finally, we use the rendered chicken fat with grilled spring onion to make chicken rice. It is traditional to serve birds "head on," but guest can absolutely request for heads to be removed. We offer our Purple Chicken Claypot Family Feast nightly, at dinner between 4:30pm-6pm and between 8pm-9:30pm

Whole Steamed Fish
Serves 4-6. Our Whole Steamed Fish Family Feast features the freshest available whole fish, sustainably sourced from around the world, delivered the morning of reservation. We treat the fish by marinating in lightly sweetened soy, ginger, and spring onion, then dry curing for 3-hours. We cook the fish a la minute by steaming with white wine and aromatics, then we pour bubbling scallion oil overtop, and we finish by pouring our lightly sweetened soy, ginger, and spring onion reduction tableside. Fish is served with steamed radish, pickled red onions, spring onion and cilantro slaw, crispy shallots, and cilantro rice. In the spirit of traditional Chinese whole steamed fish, we encourage guests to explore not only the filet, but also the head and collar areas of the fish–which is considered a delicacy and usually reserved for the guest of honor, first. Beef Dino Short Rib
Serves 6-9. Our Beef Dino Short Rib Family Feast features 2.5-pound, USDA Prime grassfed beef, short rib sections; your choice of either two or three rib sections. We treat the short rib by first curing in fermented soybean paste and red wine for 12-hours. Then we cook the beef twice. First, we steam at low temperature for-12 hours until tender and juicy, then we glaze with honey and grill over charcoal until fully caramelized outside. It is served with pan-fried buns, an assortment of fresh lettuces and herbs, Little 4 Sauce, spicy whipped tofu, sweet soy and chili oil.
