Dry White Wines
Plenitude
French for "All the Best", Plenitude is a unique blend of Chardonnay and Viognier. Aged in stainless steel to preserve the acidity and delicate flavors, it expresses beautiful citrus and grapefruit notes with a crisp and refreshing dry finish. Enjoy as an aperitif or with light seafood and poultry dishes. 600 Cases Produced
Chanteloup
French for "Song of the Wolf", Chanteloup is a medium-bodied dry white wine with a hint of French oak. This wine was fermented completely dry and offers an excellent balance of fruit, floral notes and delicate French Oak tannin imparting a softer finish. This unique flavor was achieved by blending 70% French Oak fermented and sur-lie aged Chardonnay with 30% stainless steel fermented Viognier. Enjoy with smoked seafood, poultry, white-meat dishes and soft cheeses. 400 Cases Produced
Dry Rosé and Red Wines
Sunset Rosé
The Sunset has been created as a Rhone-style dry rosé. Using the traditional French process known as "saignee," we drew off the desired amount of juice from each of our red varieties just prior to fermentation, and then barrel fermented the light colored juice in neutral French Oak barrels to complete dryness. The resulting blend is aged in stainless steel to create a refreshing, fruity, and complex dry rosé to enjoy with picnics. 200 Cases Produced
Coupage
French for "the art of blending", Coupage represents a medium-bodied, traditional Bordeaux blend of Merlot and Cabernet Sauvignon. These wines were aged in older French Oak for 12 months prior to blending. Coupage features complex berry flavors with a soft tannin balance and can be enjoyed with roasted meats and hard cheeses. 300 Cases Produced
Howling Wolf Red
This non-vintage wine allows us to blend multiple years of our Syrah and Cabernet Sauvignon harvests. Howling Wolf's multiple vintage blend of Syrah and Cabernet results in rich, strawberry jam fruit flavors with bold tannins and mouth feel on the finish. These varietals are aged 12 months in new American Oak, then blended and re-barreled for an additional 4 months. 475 Cases Produced
Instinct
Instinct is an excellent full-bodied "Rhone Style" red wine, representing a complex blend of all the varieties we grow on our Family Estate Vineyard. After aging for 12 months in new French and Hungarian Oak, the individual varietals are blended together and then re-barreled for 8 more months. This encourages the integration of the jammy fruit flavors of Syrah, the earth tones of Mourvedre, the bold structure of our Cabernet Sauvignon, and the complexity of Touriga Nacional. Enjoy this extraordinary wine with wild game or grilled red meats with robust sauces. 500 Cases Produced
Claret
This bold Family Estate Reserve Blend of Cabernet Sauvignon and Malbec, offers robust tannin and dark berry fruit flavors with an earthy spice on the finish. Claret was aged for 24 months in new Hungarian and American Oak barrels, which developed rich vanilla flavors and bold oak tannins. Enjoy this Award Winning Blend with grilled meat dishes or hearty stews. 400 Cases Produced
Boegner Family Private Reserve Cabernet Sauvignon
This is 100% Estate Grown Cabernet Sauvignon. We broke our tradition of blending varietals to bottle this small lot of Cabernet due to its remarkable quality. Rich black currant fruit with dark chocolate and vanilla notes, this wine was aged for 24 month in new Hungarian and American Oak. This wine will only be produced as a single variety in years when this remarkable vineyard is given the growing conditions needed to achieve this level of quality. 100 Cases Produced
Semi Sweet and Red Dessert Wines
WMV Demi-Sec
This German-style white wine follows our tradition of stainless steel aged Chardonnay with a good balance between sweetness and acidity. WMV Demi-Sec features delicate pineapple and tropical fruit flavors. Enjoy this wine with spicy foods, fruit and cheese dishes or tart desserts. 350 Cases Produced
Delicieux
Delicieux is a red dessert wine which has a wonderful balance of dark berry flavors, tannins, sweetness and alcohol. Aged in New American Oak for 24 months, this wine offers rich chocolate and caramel flavors with a velvety smooth sweet finish. Enjoy this wine as the conclusion to any great meal, or with rich chocolate desserts. 290 Cases Produced
Methode Champenoise Sparkling Wines
While many wineries inject still wines with carbon dioxide (CO2) gas to render them effervescent, Wolf Mountain Vineyards produces sparkling wines using the French-style Méthode Champenoise requiring secondary fermentation in the bottle
Blanc de Blancs Brut
Meaning "white from whites", this dry sparkling Chardonnay expresses our signature style. Light yet complex, our Blanc de Blancs offers a crisp, fruity and elegant style of sparkling wine. Hints of citrus, spice notes and crisp acidity make this our premier sparkling wine. This wine is exquisite with a light citrus salad, caviar or crab cakes. 200 Cases Produced
Brut Rosé
Our Brut Rosé is produced by adding a small amount of our dry red blend Claret to the dosage, which imparts a beautiful light salmon color. This process adds more complexity and red berry flavors to the sparkling wine without overwhelming the delicate flavors in the base wine. Sparkling rosé's are some of the most festive wines available and are certain to be a hit at any gathering. Wonderful with richer foods such as smoked duck breast. 150 Cases Produced
Sparkling Syrah Brut
Unique to Wolf Mountain, our Sparkling Syrah Brut is produced by creating a base wine of whole cluster pressed Syrah from our family estate. Once re-fermented in bottle and following aging on the yeast, the dosage incorporates a small amount of our Howling Wolf Red to enhance red wine flavors and complexity. 200 cases produced
Private Reserve Cuvee
New for Summer 2014. Check back for details
Sparkling Demi-Sec
Demi-Sec is French for "semi dry", meaning that it is medium sweet. It has more dosage than the Brut to take the edge off of the acidity and soften the finish for people that like a sweeter sparkling wine. The extra sweetness also helps bring out the fruit flavors, making the Sparkling Demi-Sec perfect for an afternoon picnic or other relaxing outdoor locale. 100 Cases Produced
