Tucked into the east end of Boulder’s Pearl Street mall is Trattoria on Pearl. Guests at the Trattoria (which means, “Neighborhood Italian café”) will notice the menu features traditional dishes from Italy. Trattoria on Pearl’s owner and chef, Guillermo Casarrubias, is on hand to supervise the kitchen on a daily basis. Each plate must pass muster before it leaves the kitchen. His personal flair for culinary artistry and his uncompromising good taste are consistently evident in each succulent creation.
