It is a stew made with selected fresh vegetables and lentils, prepared with a variety of exotic spices. Chutney - the word chutney comes from chaat-na (to lick). Indian curry is made by cooking vegetables along with various ingredients including thickening ogents ( ma by onions, coconut milk, ground seeds or nuts) and combination of spices, but using no flour. Curry recipes will be better understood if we work out the role that each ingredient plays in the recipe. Understanding the effect of each of the spices is complex. Spices are like musical notes and curries are melodies composed from them. Giving color to curry: 1) turmeric - yellow; 2) saffron - pale apricot; 3) red chlies - reddish brown; 4) fresh coriander leaves - green; 5) red tomatoes - pink or red; 6) onions - deep brown or dark brown; 7) coriander powder - dee brown.
