Somm's Select - Emidio Pepe
Emidio Pepe is one of the true legends in Italian wine - a man who set out in 1964 to make some of the best wines in the world through entirely natural methods in both the vineyard and cellar. Emidio recently started his sixth decade of work in the vineyard, passing on the winery and promotion work to daughters Sofia and Daniela and granddaughter Chiara. The result of their efforts is a wine designed to age for decades. Their 350,000-bottle library of both Montepulciano and Trebbiano date back to Emidio's first vintage in 1964. When an order for an older vintage is placed, Emidio's wife Rosa will go to the cellar and open the requisite number of bottles to decant by hand before shipment (13 opened bottles make 12 finished bottles). This hand decantation before sale is to remove sediment in a more natural way than filtration - and is a finishing flourish by the Pepe family

In early 1965, 25-year old David Lett quit dental school and moved to Oregon with "3,000 grape cuttings and a theory." He was particularly determined to prove that stylistically pure Pino Noir could be grown successfully outside of Burgundy. In February, David planted his cuttings to root in a rented nursery plot and began his search for the perfect vineyard site. This was the first planting of Pinot Noir and related varieties in the Willamette Valley and the first Pinot Gris in America. Over the last five years, Eyrie developed a 21-step process that ensures each bottle offers the best possible expression of its vintage. "Cellar Certification," as it's known, excludes oxygen during the opening, tasting, reblending, rebottling, and recorking of each individual lot. The process eliminates the two greatest risks associated with older vintages - cork taint and bottle variation
