Spicy Hot Oil Seared Hand-Ripped Noodles
this ultra-spicy, vegetarian noodle is a little more special than all of the hand-ripped noodles on the menu. the name pretty much sums it up: it is noodles that is cooked and then our chili powder blend is spread on top of the noodles and seared by pouring hot boiling (soybean) oil over it, creating a fresh hot chili oil, and mixed in with the noodles. this dish is all about the noodles and spice (but of course, it does have a touch of cabbage to balance out the textures)

"zha jiang mian" is the actual name of this noodle dish. "zha jiang" refers to the pork with soy sauce that is used in these noodles. the sauce is savory with a bit of sweetness to it. it is served in many northern parts of china, as well as in korea (though there are definitely variations in taste)

(cold & spicy). contrary to logic, there is no such thing as one vegetable that is called the "tiger vegetable," nor is this salad called "tiger vegetables salad" because it resembles a tiger in appearance in any way. the reason is because this salad is packed with jalapeno peppers, along with flavorful greens such as cilantro and scallions, giving it a strong (fierce like a tiger, you can say) flavor
