This taco literally means "little meats" and is a traditional dish of Mexican cuisine. Is is made of pork that has been braised until tender. It is then pan-fried in its own fat until crispy and golden brown. It is topped with cilantro, chopped onion and chopped escabeche and served on a corn tortilla.
Pollo Adobo Taco
Free-range chickens are marinated in achiote paste, sour orange, garlic and cilantro. This taco is served on a corn tortilla and garnished with pickled red onions and salsa verde.
