In 2004, the founders of Swanky’s wanted to create a fresh alternative to the status quo Mexican restaurant. Matt Wilson and his wife, Michelle, had both lived out west and in the Northeast, where they had developed a craving for fresh Tex-Mex concepts that were sprouting up across the country. Matt worked with Bernard Johnson and a designer from Houston to create what became Swanky’s Taco Shop. Matt wanted to combine the atmosphere and service of upscale restaurants with the pricing and convenience of fast-casual dining. Just before opening, Matt decided burritos and tacos were not the same without a Margarita or a beer, so a full bar was added. This inspiration has allowed Swanky’s to better serve customers and to create a more social evening atmosphere.
