In contrast to all the others, the Orval Trappist brewery makes only one beer for the general public. It has an intensely aromatic and dry character. Weyerbacher Merry Monks, Weyerbacher Brewing, Pa. Belgian tripel, 9.3%
To be true to the style, Merry Monks' Ale is bottle conditioned. This means a bit of sugar & yeast is added just prior to bottling. This imparts a special effervescence to the beer, a creamier carbonation, and also extends the shelf life. The on-going fermentation inside the bottle will change the character of the beer as it ages, and you'll find it becomes dryer with age.

Made in open vats with beer of mixed fermentation, it is left to mature for four to 12 months in the cellar. You'll immediately pick up on the wonderful aromas of caramel, apple, rhubarb, cherries and malt. On the taste buds you will find hints of apple and cherries, combined with woody notes, while the aftertaste hints at nuts and dried raisins.
Long before hops were common in most beers, various fruits and vegetables were used to season beers. The acidity of Lambic beers blends perfectly with raspberries. Taste: Magnificent aroma, delicate palate of raspberries with undertones of fruity acidity; elegant, sparkling clean natural taste.
Before bottling a blend is made of 2/3 young Lambic and 1/3 old Lambic. The bottles, with the wild- spontaneous yeast flora, are refermented in the cellar. After 6 months the Gueuze obtains a golden color and a cidery, winey palate with a more complex and natural flavour.
In origin, this sweet-acid drink was obtained by adding fresh black cherries to a barrel Lambic of 6 months young. The addition of fruits provokes a new fermentation in the oak barrels. After another 8 to 12 months, only peels and stones left and the kriek-Lambic is ready to be filtered and bottled.

This beer is developed by Lindemans brewery, using straight juice-method. The result is a fresh fruity drink with the background of the rich bouquet of Lambic. Taste: Golden in color; with a nose that fills the room with fresh peaches. Sparkling, crisp and refreshing balance of fruit and acid.
