Sharkbite Grille is the brainchild of founder and managing partner Scott Driscoll. After decades in the hospitality industry that have taken him from Albany, New York to Puerto Rico and all points in between. Scott has owned or operated a diverse list of concepts from fine dining to quick-service casual. Locals may recall Sierra Grille, which he owned and operated.
It was during his travels that the idea for Sharkbite Grille began to emerge. It was his dream to create an oasis for people to come and feel welcome and relaxed with great food and drink. A lifelong fan of Jimmy Buffett, Scott has always been a huge admirer of Margaritaville. During one of his visits he marveled at the crowds of people all seemingly enjoying the atmosphere created by the popular watering hole. It was then he vowed to himself that one day he would have such a place to call his own.
