In the long hot summer of 1966. Jose’ Ruiz, along with his parents opened a Mexican restaurant. Jose’s friends and family were convinced he was nuts. Few people in St Louis had ever seen a Mexican, much less ever tasted Mexican food. And to certify Jose’s insanity, he was opening his Mexican restaurant far north of St Louis, in the fields outside the small town of Florissant. Who in their right minds would drive that far? Only months after opening, the little four-table restaurant was boasting of lines wrapped around the building. Jose’ wasn’t crazy anymore,
