He had many inspiring quotes – "If you want to know about a culture, spend a night in its bars." He is legendary for his appreciation of a good drink. He would write cocktails into his books, or brag about putting down 12 Papa Dobles (which are doubles) in one sitting at the bar he helped make famous, El Floridita, in Cuba in the 1930s and 40s. The omission of sugar in his daiquiri was meant to help prevent diabetic episodes, which is where the natural sweetness of grapefruit and the sweeter maraschino come into play. Our adaptation is great for people that don't want "sweet" cocktails

June 7th, 1867, Paris - It was on this historic night at Café Anglais where the famous Dîner de Trois Empereurs or "Three Emperors Dinner" took place--an event many consider the most decadent gastronomic affair ever to occur involving 16 courses paired with the world's greatest fine wines. Amongst 1847 Châteaux Marguax, 1848 Châteaux Lafite, and Madeira from the 1700s it was the inaugural debut of Louis Roederer's masterpiece: "Cristal" that stole the show. In keeping with tradition, "Cristal" Champagne is released only in the most special years and continues to shine above many of the tête de cuvées to this day. The history of California wine cannot be told without the famed estate, Mount Eden. Since the early 1900's vines have overlooked the Santa Clara Valley thanks to two American viticultural pioneers, Paul Masson and Peter Martin Ray. They are accredited with planting some of the first Chardonnay and Pinot Noir vine cuttings from Burgundy in California. Today California's newest trailblazers have set their eyes on expanding one of its most promising regions, the Edna Valley. In the bucolic Edna Valley lies the Wolff Vineyard planted to Chardonnay vines dating back to 1976. These old vines result in an expression that exudes lemon blossom, lime balm, and honeysuckle with a tightly woven palate of pear flesh spiked by grapefruit zest and tangerine peel to finish. In 2010 the Barolo region was officially demarcated and recognized for its 181 "Menzioni" (think "Premier Cru" and "Grand Cru" classifications in France). These designations celebrate the soulfully expressive characteristics of each site's diverse soils, varying altitudes, and unique grape growing typicity. Outside of the Cote de Nuits in Burgundy, there is perhaps no other region that is studied and dissected in greater detail than the zone of Barolo. We are excited to highlight these "terroir-driven" wines from some of the greatest producers and vintages.
Barolo Riserva is the crown jewel of Italy. A rarity made by select producers in only the best of vintages, one doesn't need to wait for a special occasion to pull the cork-- the act of opening a bottle in itself becomes the celebratory event. Their Montefico bottling is sourced from a special parcel called Vigna Bric Mentina, which lies at the best part: the top of the sloping vineyard, facing south where the grapes receive the most sunlight. Cocito's Barbaresco Riserva is sourced exclusively from the Baluchin vineyard, which is located in the "Cru" of Bric Micca and derives its name from the local dialect meaning "star". Cocito vinifies only one red wine, the Barbaresco Riserva, in very limited quantities. Angelo Gaja is the man credited for bringing the small commune of Barbaresco out of obscurity. His influence has changed the way the world views Italian wine to this day. Chianti has always been centered between Florence and Sienna, the original growing zone that was first recognized in 1713 by Cosimo Medici III. In the 1960's, plantings grew outside of the original zone(now called Classico) into almost the entire Tuscan region. In response to falling quality, subzones were created, one great one in the commune of Rufina. Rufina's Chiantis drink a little more rustically, more earthy than polished. The story of Alberico begins with Prince Alberico Ludovisi, scion of one of Rome's most esteemed noble families. In 1946, he passionately devoted himself to organically cultivating some of the finest Merlot and Cabernet Sauvignon just outside the walls of Rome - long before "organic" became a buzzword or "Super Tuscan" blends of non-native Italian grapes took off. His wine: "Tenuta di Fiorano", became a coveted gem among collectors, hailed as an absolute "unicorn". Just as he reached the peak of his craft, the engmatic prince abruptly halted production and mysteriously uprooted his vines, nearly letting his legacy slip away into obscurity. After Alberico's passing, his daughter inherited the vineyards, which forged a link to Italy's most icnonc wine family throught her marriage to Piero Antinori of Tignanello fame. Today, their daughers - Alessia, Albeira, and Allegra - salvaged a few rows of surviving vines and successfully revived this storied wine. The Passopisciaro Etna Rosso is an exquisite expression of the land on top of Mt.Etna. Located in Sicily, at the southern end of Italy's boot, this vineyard is the highest elevation in Europe with grapes planted at just over 2,500 feet. The volcanic soil and extended exposure to the sun offer a complexity unmatched by any other terroir. The grapes used for the Passopisciaro Etna Rosso are Nerello Mascalese and Nerello Cappuccio which produce a wine of great depth and character. Winemaker Evan Martin is humbly producing some of the greatest Pinot Noir found anywhere. Like a virtuoso artist, Evan's discerning taste leads him to maniacally select only the highest of quality grapes, sourced from vineyard sites as rare and exceptional as they come. Enter his pièce de résistance, the illustrious "Koosah" vineyard bottling. The name Koosah, derived from the dialect of the Coastal Salish people, evokes a sense of awe with its poetic translation, "beautiful ceiling in the sky," a fitting portrayal of its perch atop the crest of Eola-Amity Hills. To the direct west of the Koosah vineyard lies a majestic gap in the formidable Coastal Range mountains. It is through this opening (aka "Van Duzer Corridor") that Koosah lies completely exposed to cooler marine temperatures and the constant threat of tempestuous storm systems that could devastate the vineyard at any time. One might ponder the audacity of sourcing fruit from such an extreme and dramatic setting, but in the case of Koosah, fortune favors the bold.. Here, the Pinot Noir vines thrive, un-grafted and planted on their original rootstock, basking in warm days and cool nights but also benefitting from the high elevation where intensified UV rays gift the vineyard with one of the most prolonged and perfectly balanced growing seasons in the Willamette Valley. Limited and exceptionally special, the '21 Koosah tantalizes the senses with notes of Alpine spices, macerated dark cherries, and a touch of reduced pomegranate leaving a lasting impression of indulgence and sophistication. Camille Péters, around 1919, was one of the first growers of the Champagne region to decide to bottle wine under his own name. In 1932, at the ripe old age of 12, Pierre Péters, the eldest son of Camille, began to attend his first exhibitions alone and develop sales for his father's brand, and never looked back. He took over operations in 1944, and released his first vintage in 1946 under the "Pierre Péters" brand. The estate, now run by Rodolphe Péters, owns just over 19 hectares of sustainably farmed vineyards , all of which are primarily located in the Côte des Blancs, where the soils are chalky and Chardonnay is king. Their flagship Champagne, the "Cuvée de Réserve", is a Blanc de Blancs style made from 100% Grand Cru Chardonnay grapes.
