Each individual pie is approximately 11". Our pizzas are made-to-order and cooked in a wood-fired brick oven. We keep a small fire on the side of the dome-shaped oven that holds temperatures near 900 degrees. Each pie is hand-stretched and baked at high heat, producing a crust that's soft, tender, chewy and slightly charred all while leaving the cornicione (crust edge) light, airy, and deliciously fluffy
