Brewery Vivant. Our brewers are slinging some serious hops into this Belgian inspired DIPA, which is why we initially named it "Trebuchet", the mediaeval French catapult pictured at right. We ran into a snafu with the name when we discovered another cool brewery in California already had it trademarked. Instead of crying about it, we just changed it to the way 9 out of 10 people pronounced it anyway. Tree Bucket. Took a French word and used American phonetics-- kind of like what we do with our beer styles. Cheers! Characteristics: Belgian candy sugar and the Ardennes yeast strain lend sweetness to this very, very hoppy beer. Tropical fruit-forward Citra hops, among others, give balance to the sweet profile and high ABV. The beer is babied in the fermentation tanks and dry hopped just before packaging. From aroma to sip to burp, this beer will have you storming the gates for your next pint. 5 Rabbit Cervecería. What captures the fun of summer better than the ding-ding-ding of the popsicle cart and the cool rush of fruity fun? Paletas! And the versions most popular in the Latin community are made with frozen fruit juice in a wide variety of tropical flavors. We though this would be a perfet inspiration for a line of summer beers. But these are not kiddie treats. In addition to pure, high-quality fruit pulp, we add a number of delicious spices and other flavors that build on the fruits, adding complexity and depth. They're still a lot of fun and amzazingly quaffable at only 3.5% vol. A large proportion of wheat gives them a smooth, creamy mouth-feel. There's really never been anything like them. Paletas are meant as summer refreshers—a more sophisticated alternative to one-dimensional shandies and radlers. We're brewing them as a series, each one different, and when one's gone, it's gone. We brew the next one. At the end of summer, they vanish until next year. We hope never to repeat ourselves. Our first paleta features Gauva with pink peppercorns and tarragon. The abbey's Father Abbot Nys became acquainted with Albert Lootvoet, a master brewer. Passionate about the future of the brewery, Father Nys was upset to have to witness how, since the unpleasant stay of the French revolutionaries, the brewery had slowly fallen into decline and had eventually had to close its doors in 1809. Such a magnificent place could not be forgotten, he believed, and he vowed to bring the Leffe beer back. Father Nys and the brewer set about the challenge with vigour…and succeeded. Shortly after, the Leffe brewery was back in full effect. After Leffe Brown, a beer that shone brighter than the sun saw the light of day; they named it Leffe Blond – a beautiful chapter for Leffe indeed. Leffe Blond is the flagship of Leffe. The unique recipe is the fruit of centuries of experience in the art of brewing, which brings a broad palette of aromas into balance. It is elegant, smooth and fruity, and it has a spicy aftertaste with a hint of bitter orange. Its light, sunny colour is due to the use of pale malt. Since 2005, I've wanted to bring great tasting thin crust pizza in an urban setting to Chicago. In 2010, I founded Pizzeria Serio in a former recording studio in Lakeview. I used the 5 years to thoroughly research the recipes and techniques required to make a great Pizza and honed my craft baking hundreds of pizzas in my home oven. My Pizza was inspired by the pizzaiolos that immigrated to America from Italy and opened the first Pizzerias in NYC, many of which are still in existence today. I like to call it NeapolAmerican, but some might call it NY Style or New Haven style, but whatever you call it, it's instantly recognizable to anyone familiar with East Coast Pizza. It has the same DNA as those pizzas made by Neapolitan immigrants as they started adapting their pizza to American tastes. From the great Slice Joints like Ray's or Joe's to the "Pie Only" places like John's, Lombardi's, Grimaldi's, and Patsy's, I wanted to bring a similar Pizza to add to the great pizza landscape in Chicago. In keeping with those same traditions, our dough is always hand stretched, the tomatoes are whole plum San Marzano style, and our Cheese is always high quality 100% Mozzarella. I have tested several purveyors and have hand selected the top quality and best tasting for my pizza. Of course, it's all baked in our Brick Oven at 800 degrees for a Seriously great taste!
