Big Fat Chicken Soup
This is like a hug in a bowl. Onion, celery, carrots and garlic and a little crushed red pepper. The soup is filled with LOTS of yummies... corn, potatoes, lima beans and ditalini pasta. The soup is finished with a big squeeze of lemon juice and a pinch of cinnamon. Garnished with cilantro.
Grilled Pizzetta with Stracchino, Fennel Sausage, Pickled Hot Cherry Peppers and Arugula
Grilled flatbread - the dough is actually cooked on the grill and topped with stracchino (pasteurized cow's milk cheese) which is a mild, creamy, white cheese from Lombardy (northwestern Italy), spicy browned sausage, pickled hot cherry peppers, arugula, and parmigiano.
Braised Chicken Leg with Mushrooms and Almond Purée with Haricot Verts
Chicken leg braised in white wine and chicken stock with onions, garlic, cremini, oyster and shiitake mushrooms. The sauce is then finished with a purée of toasted almonds. The almond purée thickens the sauce and gives an AMAZING nutty, rich flavor and mouthfeel. The chicken leg is served over sautéed baby string beans and topped with toasted breadcrumbs with parsley and chives.
