Paul and Dorothy Fidrych opened Paul’s Pasta Shop in 1988. They live with their three boys in Ledyard Connecticut. They have been married since 1984. Dorothy is a 1981 Graduate of Johnson and Wales University with an Associates Degree in Culinary Arts. She is a graduate of St. Bernard High School in Uncasville where she grew up. Paul is a 1982 Graduate of the Culinary Institute of America with an Associates Degree in Culinary Arts. He is a graduate of Stonington High School. They have three sons. Paul is a graduate of the University of Connecticut. Rudy is currently at New England Culinary Institute in Montpelier,Vt. David is attending Keene State College in New Hampshire.
