Panchos and Gringo's opened it's doors on March 3, 1987 in Brookfield Ct. John Matos decided to relocate to Brookfield after successfully owning Pancho's and Gringo's in Mount Kisco, N.Y. He visited the area and had a vision. A vision of opening a Mexican Restaurant and raising a family in a small welcoming town such as Brookfield. Our Motto was, "Mi Casa Su Casa" (my house is your house). When John opened the doors of his house for the first time he held his breath and crossed his fingers hoping that this area would welcome him. And boy...did they.
We started out in Candlewood Village and in 1996 expanded and relocated right next door to our current location. After starting in Brookfield, John and his nephews opened other restaurants in Southbury, Southington, Monroe, Prospect and Litchfield Ct. Although these restaurants are no longer John's, the initial concept is still the same for all of the restaurants. In 2006 John decided to open a restaurant in Bethel Ct., after the closing of his Ridgefield store in 2005. This new location at the Dolan Plaza in Bethel is doing very well and has been accepted tremendously by the community.

We have changed our "motto," We've updated and expanded our menus and try to keep up with the times and trends it brings along, but we still have the same great service, good food, good drink and good time!!
