Our foods are cooked using the finest of spices and flavorings. In traditional Nepalese cuisine we only use spices and fresh chillies to add flavor to a dish. Our meals therefore offer a healthier alternative to some other ethnic cuisines that use flavored oils to enhance the dish. It also has influences of India, Tibet and Burmese cuisines. The food is based on soil, climate and customs. Dishes of this country are healthy as they use less fats and more vegetables, pickled dishes, salads and lean meats. The spices used are similar to that of Indian food though cooking method is different. Flavors are subtle with several different combinations of natural herbs of spices giving each dish its own distinctive flavor. Spices are used mildly and the addition of it is purely personal. Nepalese people mainly have a vegetarian diet. Non vegetarian dishes are served only at special occasions. Condiments include small amount of pickle, spicy chutney. Other main meal side dishes include lime, sliced lemon and fresh green chili.
