The Muddy Waters Coffee Company is operated and owned by master roaster Chris Nichols. Chris moved to Arcata in 1998 from Redwood City, CA to study art at Humboldt State University.While studying at H.S.U. Chris began his employment at Muddy Waters Cafe in 1999 as a barista. Muddy Waters Coffee opened its doors in 1998 based out of a classic turn of the century, 4-bedroom California Tudor house conveniently located by the H.S.U. campus. As Chris became more involved in the company he began to learn the fine roasting techniques from then roaster Jack Frasier, and in 2002 Chris took over the roasting duties from Jack when Jack decided to start his own company Hypnotic Designs. In 2003 Chris became the assistant manager and the official roaster of Muddy Waters Cafe. After showing exceptional managerial skills and insight Chris was then promoted to General Manager in 2004 and in 2005 became a certified technician in La Marzocco and Bunn equipment.
