Tandoor simply means "oven" tradionally a clay shell, fired in early days with wood and now with charcoal. Tandoori cuisine is almost exclusively North Indian and it started as a way of cooking breads: but it developed as an ideal way of cooking meats and even vegetables, on long metal skewers that stood inside the Tandoor.
