Against The Grain Rico Sauvin, Imperial/Double IPA, 8.2% ABV
An India Pale Ale featuring Nelson Sauvin hops named after the Sauvignon Blanc grape, a variety of hop developed and grown in New Zealand. It has a strong fruity flavor and aroma that is described as resembling white wine, or fresh crushed grapes or gooseberries. Allagash Tiarna, Sour Ale/Wild Ale, 7.1% ABV
Tiarna is a blend of two beers, one aged in oak and fermented with 100% brettanomyces and the other fermented in stainless with a blend of two belgian yeast strains. Both beers were brewed with a combination of 2 row and wheat malt in addition to specialty grains. It was hopped with Hallertau, Styrian Goldings and Cascade hops. Saison "Classic Saison" This is a Belgian-style farmhouse ale. The aroma is dominated by fruity esters reminiscent of citrus fruits along with a moderate earthy and floral hop aroma from the use of Noble-type hops in the brewing process. Has a deep gold, hue that is often hazy, and a voluminous head on pouring as a result of the bottle-conditioning and high natural carbonation. Maine A Little Beautiful Something, American Pale Ale, 5.5% ABV
A tiny beautiful something showcases a new hop variety, El Dorado. We started playing around with this hop last year. We brewed a pilot batch with this hop exclusively and one with it blended with some of our other favorite Northwest varieties. In the end, we decided that the El Dorado had such a unique and interesting character on its own, so we decided to brew it as a "single hop" pale ale. The aroma and flavor offer intense candied orange and citrus zest. A touch of flaked oats provide a rounded, silky mouthfeel. And like our other hoppy offerings, tiny was brewed to finish dry and clean.

Blended traditional wheat beer with an overly acidic & funky beer fermented solely with lactobacillus. Coriander and salt are added at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouth feel.

Ommegang Joemmegang, American Strong Ale, 7.5% ABV
The beer begins as a malty brown ale, comprised of Belgian aroma, caramel malts, and oats. A bit of lactose adds body and some sweetness, and a heaping helping of cocoa nibs in the whirlpool provides further richness, and a deep chocolaty aroma. Hop aroma is nonexistent, and bitterness is there just to keep the sweetness in check. We worked with our great friends at Stagecoach Coffee in Cooperstown to come up with a custom coffee blend that complimented our base beer. Sumatra, Papua New Guinea, and French roast form a combination with chocolate, earth, spice, fruit, and light roast characteristics. Following primary fermentation the beer is cold crashed and yeast is removed.
