Allagash Fluxus is a beer of continuous change. Brewed differently every year to commemorate our anniversary, this year's Fluxus is a huge Imperial Chocolate. The brain child of brewer Doug Klippenstein, this beer utilized a unique brewing process that used wort from a smaller brew, as the "water" for mashing the grain for this brew. Maine-grown barley was used as the base for this grain bill that also included a blend of three roasted malts and oats. Fluxus was appropriately hopped with both US Saaz and Glacier hops. Just before knock out, fifty pounds of Taza roasted Cacao nibs were added to the whirlpool. The result is a thick, sticky stout with tons of both roasted and chocolate flavors, aromas of tobacco and cocoa, and a surprisingly sweet, creamy finish

Deschutes The Dissident, Flanders Red Ale 10.5% ABV Bend, Oregon
The Dissident is a distinctive Oud Bruin, Flanders-style brown ale, with a fruity aroma and flavor,. Fermented for more than 18 months in isolation from the rest of the beers, To give The Dissident its characteristic sour taste the brewery used a wild yeast strain called Brettanomyces (also known as Brett) during fermentation. Known throughout the wine world for creating earthy undertones found in many European wines, Brett is used in the beer fermentation process to create strong flavors typically associated with Belgian beers. Unlike English varieties that use traditional inoculated yeasts in the fermentation process, beers made with Brett take much longer to ferment and require additional barrel finishing time to balance the sour flavoring. In the Dissident's case, this meant aging a portion of it in pinot and cabernet barrels for over 3 months. Another key flavor component comes from the Central Washington cherries that were added twelve months ago. Due to the wild yeast , The Dissident required special treatment and was held in isolation under lock and key apart from the rest of the brewery's beers to avoid any cross-contamination. A secondary bottling line was also brought in from an outside contractor to facilitate The Dissident's bottling and insure the beer and wild yeast never touched the brewery's machinery. With a beer this wild and truly unique, Deschutes needed a special label to alert consumers to what lay inside. The resulting image immediately sets The Dissident apart from the other Deschutes Brewery beers, even the Reserve Series beers. The fruit and acidity in The Dissident make it ideal for pairing with a wide variety of dishes – the high acidity is perfect for cutting creamy dishes or cooling spicy ones. Because of the fruity characteristics derived from the cherries, the beer also pairs well with chocolate. Deschutes Brewery President and Founder Gary Fish recommends pairing the Dissident with "anything chocolate, the darker the better, soft cheeses like Brie and creamy dishes like spaghetti carbonara, or macaroni and cheese

Leelanau Petoskey Pale Ale, Belgian Ale 5.5% ABV Lake Leelanau, MI
The aroma is lively, with more of a farmhouse character than other pales, but the citrus hop notes are dominant. Petoskey Pale is a liquid ode to our great state, an attempt to represent the unique character of Michigan in a bottle of living beer. This quintessentially Michigan beer is named after the state stone. Petoskey stones are actually fossilized coral freed by glacial activity, and can be found in sand dunes and beaches at the top of lower Michigan, near the town of the same name. Both are named after the community started by Ottawa Indian Chief Ignatius Petosega, so our name is a nod to the native culture we so respect. We even put a number of petoskey stones around the large wooden cask during aging, more to impart the soul of the land than an actual flavor. This drink is so steeped in history and complex in flavor that we think of it as a style all to it's own – one we call Michigan Grand Cru Pale Ale. As soon as its poured into a glass the difference between this and other pale ales is evident. A tall head rushes to the top of the glass, becoming quite rocky as it settles. The aroma is lively, with more of a farmhouse character than other pales, but the citrus hop notes are dominant. By this point the ale's origins at the Jolly Pumpkin Brewery are evident: the wild yeasts that inhabit the brewhouse give an unmistakable character. On the palate this beer has a perfect balance between the sweet apricot notes from the malt, the complex hoppiness, and wild, slightly tangy character from the time in barrel. More herbaceous than floral on the finish, but refreshing nonetheless. Like all of the Leelanau beers, Petoskey Pale is great on it's own but was designed to be consumed with a variety of the world's cuisines. Pair this ale with bold meat and vegetable flavors: lamb kabobs, ratatoullie, and bison burgers with blue cheese are some of our favorites. It cuts through the fat and barbeque sauce of a rack of ribs like none other, leaving one's palate refreshed and ready for more. North Coast Grand Cru 2011 American Strong Ale 12.5% ABV Fort Bragg, CA
Grand Cru doesn't fit neatly into any established category. We brew it exclusively with Pils malt with an addition of agave nectar in the kettle. The beer is then fermented with the same Belgian yeast that we use to ferment Le Merle. Meridian Pint was founded on the premise of environmental sustainability. Our strict focus on American craft beer allows us to eliminate the impact of Trans Atlantic shipping as well as maintain a locally based revenue stream. In addition, we serve mostly draft beer enabling us to reduce our impact on recycling resources. ‘Envirelation’, DC’s first and only composting company, has been hired on to compost the bulk of our waste and reduce our impact on landfills to less than 10%.Furthermore, much of the equipment, furniture, construction materials and design elements have been recycled or reclaimed. Our energy source comes from wind mill farms in the way of green energy credits. Finally, 95% of our staff lives within walking distance helping to minimize parking problems, traffic flow and overall reduce our carbon foot print.
