I have to admit that these also knock me out. These buns prove that gluten-free breads are best when baked in smaller sizes. I recently enjoyed a ham & cheese sandwich on the beach that met every requirement of a good sandwich. For those of us who have searched for satisfying wheat bread substitutes, that is saying an oven-full.

Although for me they resemble more a raised biscuit than a wheat-based English Muffin, by any name they are one of my very favorites: warm and lightly toasted with butter and preserves oh my goodness! Almond Macaroons
The idea for these cookies came from the Pacifico Bakery in California. Their almond macaroons are the highlight of my visits to the Oakland Farmer's Market. Their published recipe was a little too time consuming for me but my revised recipe is just as good even better if you like that perfect combination of crispy/chewy cookie. Like a true macaroon, these have no flour in them.
