Flavor Descriptions
Amaretto Cherry w/ Almonds
A core flavor at Lafayette, we start with fleshy bordeaux cherries steeped in cherry juice then add high quality vanilla, some amaretto flavoring, and finish it off with a few sliced almonds. The result is a smooth, creamy deep pink creation with both soft and crunchy texture
Apricot Sumac
The answer to your first question is "No". We are not harvesting Poison Sumac and incorporating it into our ice cream. Sumac is a Middle Eastern spice derived from a deep-red-colored berry that has citrusy qualities and a fruity-tart flavor. Chefs are known to use it to add depth to white meats and fish. We've coupled sumac with apricot preserves. The only "itching" you'll develop is one to return to the shop to pick up more.
Bacon Caramel Corn
Seasonal Flavor - Jan, Feb, March. Dots of caramel in a popcorn cream mixture combined with smoked bacon fat----we are certain that both your cardiologist and your personal trainer would give you two thumbs up on this consumption!
Banket
Seasonal Flavor- Dec, Jan, Feb. Say the "a" as "ahh" and then enjoy our version of this Dutch, almond paste filled pastry which coincides with the Christmas season and celebration of Saint Nicholas Day. We start with a vanilla base, add almond extract, and then add dots of almond paste and sliced almonds for texture
Bittersweet Chocolate
A core flavor at Lafayette Creamery, our version has no interruptions from chips or chunks or other texture items. Our suggestion--sit back and let this dissolve slowly on your tongue or pair it with cherry syrup in an Ice Cream Soda
Black Forest
Seasonal Flavor - July, Aug, Sept. Based upon the decadent German Schwarzwalder Kirschtorte dessert, the Lafayette version starts with our Bittersweet Chocolate, adds texture with a flat chocolate chip, flavor depth with a hint of almond, and a generous helping of fresh Michigan sweet cherries. Blueberry Cheesecake
Seasonal Flavor - July, August, Sept. Fresh Michigan blueberries, cheesecake chunks, and a little bit of texture via crumbled graham crackers. Available seasonally when fresh blueberries are harvested
Blueberry Cream Cheese
Seasonal Flavor - July, August, Sept. We trounce over to the Texas Corners Farmer's Market (Fresh on Q!), Husted's on West Main or any number of local blueberry purveyors for fresh Michigan Blueberries to which we add a little sugar, reduce and then couple with cream cheese. Researchers point out that blueberries contain antioxidants which work to neutralize free radicals that are linked to cognitive decline, cancer, cardiovascular disease, and other age-related conditions. Blueberries also contain high amounts of manganese which promotes bone development; however, the great flavor, texture, and color of this ice cream will provide maximum happiness - perhaps a greater benefit to your health than all those scientific findings!
Blueberry Sorbet
Seasonal Flavor - July, August, Sept. By definition sorbets are dairy - free and use fruit - not dairy - as their base. Judging by the reaction of a number of local chefs, it seems we've finally nailed the recipe for Blueberry Sorbet
Caramel Apple
Seasonal Flavor - September, October. Lafayette starts the process by making applesauce with fresh Michigan apples, adds these to the heavy cream bath, and then adds caramel upon extraction. Its especially refreshing after peeling all those apples
Caramel Toffee Twist
Proof positive that we act on customer flavor suggestions. This simple flavor combines crunchy toffee covered with chocolate and pairs it with swirls of buttery caramel. Simple, easy, delicious, and available on a year-around basis when other flavors do not take precedence
Cherry English Walnut
Seasonal Flavor - June, July, August. Prunus cerasus - Fresh sweet Michigan cherries are the basis for this delicious seasonal flavor. We've coupled prunus cerasus with Juglans regia and then stick them on the top of a waffle conus for you to enjoy. You will likely use the multi-functioning licking device attached to the floor of your mouth to tell friends and enemies alike about this great flavor

Cinnamon Peach
Seasonal Flavor - July, August, September. Ahh, the blessed peach tree. It must endure at least 45 days of below-freezing temperatures just to have the opportunity to bud. It then does its hardest work in the most unfavorable conditions of summer bearing its greatest weight in the hot, humid conditions of late July and early August. We think the peach tree would be pleased to learn of the fine accommodations in which its offspring reside---a light dredging of sugar and cinnamon and then a spin in a heavy cream bath
Coconut Almond Fudge
Toasted coconut flakes and sliced almonds surrounded by a thick layer of fudge. It is like one of those candy bars that used to be a lot bigger when we were kids, but is really small now and its frozen

A slight variation on our Mint Chocolate Chip, we extract the Andes' Mints and add in a crème-filled chocolate sandwich cookie. Its simple, features the great green color that draws the eyes of youngsters, and tastes great
Habanero Caramel
Sweet - check. Salty - check. Hot - check. Cold - check. We struggled to come up with a great caramel flavor that would stand out from other shops, but hit pay-dirt when we hooked up with local chocolatier and candy maker Cherri Emery of Cherri's Chocol'art. You'll notice a hint of sea salt along with the generous cream usage early on and then a little burn down your esophagus. We used to cycle this flavor out of the dipping cabinet when new seasonal flavors were introduced, but after the numerous customer reprimands we maintain it as a core flavor
Key Lime Pie
Seasonal Flavor - March, April, May. "That tastes like key lime pie" ! It seems like a strange thing to say that something tastes like something is supposed to taste, but it likely points to the fact that so many Key Lime Pie ice creams don't really taste like they should. Lafayette's version comes complete with crumbled graham cracker sprinkled throughout. Would make an excellent addition to an Easter table in container or pie crust
Lavender White Chocolate
Seasonal Flavor - March, April, May. This flavor is not as anticipated as spring itself, but its coincides with the hopefulness of the season as snow banks recede, green grass emerges, and the shine of the sun begins to cut through the still crisp air. You'll pick up hints of blueberry in this flavor right before the lavender aroma runs up through your nostrils. You'll be sure to want to include this flavor on Easter table, pre-order yours to make sure we set some aside for you and your family
Lemon Curd
A refreshing summer-time treat that leaves a nice clean finish. We start with lemon curd that we craft in house, add a bit more lemon juice and start churning. When in season we combine this great flavor with fresh blackberry sauce. We also make ice cream pies during the holiday season from this refreshing flavor
Mac 'n Cheese Aka Bourbon Apple Cream Cheese
Seasonal Flavor - September, October, November. Introduced for the 2017 Cheese Lady Mac 'N Cheese Bake-Off where Lafayette took home the "Most Unique" award, Mac 'N Cheese is a liberal interpretation drawing on our use of MacIntosh variety apples, cream cheese, and topped with a bourbon glaze. Mac 'N Cheese has become a fall flavor staple
Madagascar Vanilla
What's with the fancy name on your vanilla? Does Madagascar Vanilla taste any different from "regular" vanilla? The above represent valid and common questions with which we are often presented. Tastes, flavors, and preferences are all personal matters, but the vanilla we use in our Madagascar Vanilla certainly requires additional effort to produce and has distinguishing characteristics. Madagascar farmers leave the vanilla pods to mature on the vines for a few weeks after "traditional" harvest to enhance the flavor and aftertaste
Mint Chocolate Chip
We rely on our Mint Chocolate Chip to add a dash of great green color to our dipping cabinet while kids rely on it for a great green tongue! We supplement the Crème de Menthe flavor with chopped up Andes mints. Mint Chocolate Chip is a core flavor which you can enjoy as a milkshake year around

What a delicious mistake Mocha is…after mixing one of our first batches of Tarraz'u Coffee we decided to make a batch of Sweet Milk Chocolate. We quickly realized we had missed a step in the process, but then recognized a great flavor. Available year around, but we retire it periodically through the season to make room for other seasonal varieties
Pineapple Sorbet
Fresh Michigan Pineapple is the basis for this - hold on - non-dairy treat. Ok - we can't use local ingredients for every flavor
Peach Sorbet
Seasonal Flavor - August, Sept., October. Imagine biting into a slightly frozen peach. I know that sound disgusting, but if you remove the skin and the pit it changes the image substantially. After perfecting our other sorbet flavors (Strawberry, Blueberry, etc.) we were feeling out oats a little bit and thought we should extend our newfound skill to other fruits. As with most of our other offerings we use fresh local peaches from the Texas Corners Farmer's Market, Husted's on West Main, J&S Farms in Climax, Allen Farms in Grand Junction and any number of other growers of quality peaches
Peanut Butter W/Spanish Peanuts
Tastes like chunky peanut, because it is made with chunky peanut butter. Actually, that is not entirely true - we use creamy peanut butter and crush the roasted Spanish peanuts to ensure maximum freshness and crunchiness of the peanuts. Goes great on top of a strawberry scoop or a chocolate scoop or as part of a Sundae
Pistachio
Our pistachio stands out more what it is lacks rather than for what it includes - in this case it's the artificial green coloring. Instead ours is a simple recipe with pistachio extract and fresh-roasted, chopped pistachios
Pumpkin Cream Cheese
Seasonal Flavor - Sept., Oct., Nov., Dec. Remember the pumpkin bars with the great cream cheese frosting that appear every fall? This fall staple appears in late September and extends through the holiday season and is now available in ice cream pies with your pre-order from our website. Lafayette Creamery is pleased to help lighten your work load this and every holiday season with this great flavor
Rainbow Dash
Blue Moon with Chocolate M & Ms. We made this flavor and title with kids in mind, but you'd be surprised how many adults have been waiting their whole life for a tasty Blue Moon flavor
Raspberry Beret
Seasonal Flavor - July, August, September. This is what happens when there is a bumper crop of fresh Michigan raspberries and you have exhausted your sole recipe for raspberry ice cream. Knowing that chocolate and raspberries are a great paring we threw in a bunch of flat chocolate chips into a batch of deep-rose colored fresh raspberry ice cream. We then relied upon our customers to name the new flavor. We had many wonderful submissions, but ultimately Raspberry Beret edged out such great names as "Razz-a-ma-Tazz" and "Razz Hands" . The boss lobbied hard for "Razz Hands", but ultimately lost because it would have required all employees to break out into upon every order
Raspberry Ricotta
Seasonal Flavor - July, August, September. Our 2018 entry into the Texas Corners Mac 'N Cheese bakeoff combines sweetened ricotta cheese hand-swirled into raspberry ice cream made from fresh Michigan raspberries and nothing artificial. We did not win any awards from the voters in 2018, but don't mistake this for some "Miss Congeniality" flavor. It will be part of our seasonal rotation going forward
Salty Pecan Cookie
SPC is the result of letting the production team follow their instincts. Cookie dough chunks containing little chocolate flecks are combined with crunchy roasted pecan pieces and a pinch of salt to create one of Lafayette's favorite flavors. This considered a core flavor and is technically available on a year around basis - except when we cycle it out of the dipping cabinet in favor of seasonal flavors. It is; however, an autumn staple when we recommend pairing it with our Bourbon Caramel Glaze. Salty Pecan Cookie is available year-around in pint sizes in local grocery and convenience stores
Sea Salted Olive Oil
Some accounts identify Olive Oil as a favorite flavor of nobility in the Roman Empire - with so much history, it is hard to believe this flavor generates such intrigue and confused, crinkled faces. Come check out what so many find interesting
S'mores
Introduced in the summer of 2018. we start with a vanilla base then add sizeable chunks of chocolate, crusted graham crackers, and torched marshmallows. Sounds like the perfect late- night snack for the "Glamping Crowd", eh?
Snickerdoodle
Does anyone have some apple pie with which to couple this flavor? This will be great on your holiday table or your fall dessert bazaar. This too is a core flavor and available year around in grocery and convenience stores
Southern Butter Pecan
What makes our butter pecan southern you might ask? The answer to that is, "Its proprietary", but we can tell you that a certain southern chef would glowingly approve of this recipe. High-quality roasted pecan pieces are coupled with a bit of flavoring and a secret ingredient to make this core flavor. SBP is available in our shop year around and in pint sizes in local grocery and convenience stores. This is also available as an ice cream pie during the holiday season, pre-order yours from the website
Speculaas
Speculaas are spiced Dutch cookies (ginger, nutmeg, and others) formed into shapes and designs - often times taking the form of a Dutch windmill. Making speculaas cookies is a Dutch tradition associated with the celebration of Saint Nicholas day in early December. Today speculaas are available year around and, according to at least one local neurologist, make a great bedtime snack when dipped into milk (or hot cocoa, coffee, tea). We think you'll agree these cookies are quite delicious when surrounded by our super-premium ice cream
Strawberries & Cream
Seasonal Flavor - June, July, August. I cannot begin to tell you how many times customers have remarked that this flavor tastes like the Strawberry ice cream they enjoyed as a kid. The great taste comes from the Michigan sun and soil - we don't put dirt into our mix - but it is responsible for the great taste. Strawberries & Cream is as clean label as can be---fresh strawberries, a little sugar, and then a dip in the milk pool reveals a great smelling ice cream. If you are lucky you'll arrive in the shop just after we've boiled off some of the excess strawberry juice and take in the great smell of fresh strawberries
Strawberry Sorbet
Per the definition sorbets are dairy-free and use a fruit - not dairy - as the base ingredient. When in season we use fresh Michigan strawberries
Tarraz'u Coffee
We mix grounds with a little bit of chocolate and fold the mixture right in the freezer. The grounds originate from the Dota Valley region in Costa Rica which are then processed using the white honey method at the Monta as del Diamante coffee mill. If you've got a great tongue you might pick up notes of white grape, honey, and nut
White Chocolate Peppermint
Seasonal Flavor - Nov., Dec., Jan., Feb. Smooth and creamy pink ice cream with little chunks of high-quality white chocolate---the clean, fresh finish is sure to make you forgive us for contributing to Christmas Creep as we roll this out before Thanksgiving.
