La Champagne
The wine of kings, Champagne is often synonymous with celebration and festivities, has always been the most charming wine of France. From the delightful bouquet, the refined carbonnation, to the unequivocal acidity. Always a good choice for apéritif and even better as a gastronomical compliment. Traditional Bruts are the most approachable bubbly with a light effervescence, low residual sugars and refreshing acidity.Blanc de Blancs (white of whites) are made solely from Chardonnay grapes and thus benefits greatly from ageing. Rosé champagne can be made two different ways: either by blending red wine & white wine, or by extracting color and flavor through prolonged skin maceration. Both methods are effective and have consistently shown beautiful results

Languedoc-Roussillon
Languedoc is the southern most part of France, the country known for ripe fruits and friendly people you will ever meet. The wines from these regions have long been ignored, until more recently when wine lovers realized the potential of such a beautiful climate combined with intensely rich soils. Where to start? Cahors is Bordeaux's closest neighbor, working mostly with Malbec. The Côtes Catalanes is the embodiement of big fruity wines, made with as much heart as tannins. We'll let you experience the other regions for yourself, there is so much to discover

La Loire
The Loire is the land of kings and the birthplace of France. This region is most well known for its goat cheese and wines. The soil is rich with limestone, chalk and in some places "silex". The result is a rich, mineral dry white wine. Think of Sancerre and its neighbor Menetou Salou, or even the greener and more mineral Pouilly Fumé, these are all exquisite examples of a delicate and refined grape

Pinot Gris, Domaine Shlumberger "Prince des Abbés" 2015
Have you ever wondered why bottles from Chateauneuf du Pape and its other southern-Rhône neighbors have such a distinct shape? The story goes back to the XIVth century when the papacy was relocated to Avignon thus becoming the "Pope's New Castle". This region makes wines ranging from a blend of 2 or 3 different grapes to the more traditional 13- grapes blend, which would explain why two neighbors can make such different wines. If you head north, you will venture into slightly cooler and more mountaineous terrain. Starting with Cornas and Hermitage, ending in the Vienne, the valley of St-Joseph and Côte Rotie where Le Mistral balances the mediterranean sun beautifully
Grenache/Mouvèdre/Syrah, Domaine de la Charbonnière, Châteauneuf-du-Pape 1998

Bourgogne/Beaujolais
The Bourgogne region houses the essence of wine-making that has been refined over generations. You don't become a "Bourguignon", it runs in your blood. These master wine-makers have harnessed the finicky Pinot Noir grape and have honed the skill of crafting some of the most delicate and beautiful wines in the world. As for the whites, they will turn the Chardonnay grape into a wine for kings. . In the heart of Burgundy you will find Beaune and Côte d'Or where small vineyards are divided between families, creating some of the finest wines of the region. At the northern most part of Burgundy, you will find Chablis. Here the Chardonnay grows drier and more mineral

Bordeaux is the land of Grand Crus, an incredibly diverse region. From the soil, to the climate and the choice of grapes, it is easy to understand why Bordeaux has charmed so many. The perfect blend of rich, succulent merlot with the more delicate cabernet sauvignon will leave many willing to wait a few more years. Another favorite is the Médoc as well as the Pauillac, where you will find 2 of the 5 Grand Cru classé. These wines are the perfect balance of beautiful finesse and robust flavor

As a way to introduce La Voile Brookline, a few lines of how it all began. But first, an illustration of how the staff would like to make sure that for the time of a drink or a meal, the warmth of their greeting will hopefully make you forget the harsh, bitter cold of a Brookline winter night. passersby may not even be aware of the new addition to the culinary diversity of Brookline. Very much in keeping with its sister establishment La Voile, on Boston’s Newbury Street, the new Brookline location would like to convey the unpretentious elegance of a French Brasserie with the warmth of a Bistrot.
