Mexican Cuisine dates back many centuries to the ancient Aztecs and then to later Spanish and French influences. To the Spanish conquerors the native cuisine of the Aztec came as a delight. Later, the different foods brought in by those early explorers were added to and created what is served today at La Perla. During the brief reign of Maximillian and Carlotta, more sophisticated dishes of Spanish, French, Austrian and Italian origins were introduced.Chihuahua-type Mexican cooking is subtly spiced and goes far beyond the popular tacos, enchiladas and tamales. Most Mexican foods are not too peppery, although we have many table sauces, hot and spicy! We also have a very mild taco sauce.
