We have 32 states in Mexico, hundred of big cities, thousands of small towns; and every place you go people cook differently. Thus there are many customs and ways of cooking. From back in the Aztec times, to the Spanish era and through the Mexican Revolution, the most common, of course, will be the tacos, tamales, tostadas, sopas, etc., etc...But things such as burritos, nachos & chimichangas...not even nowadays in central Mexico do people know what these are!
