In 1990, the first Kitima restaurant opened in Irvine, CA. It features traditional Thai dishes that are spicy but not too hot. Originally from the Bangkok area, Kiti, the owner, strives to offer food lighter than popular Oriental cuisine. They never add MSG and seldom use oil in their cooking.To make food more accessible to less adventurous diners, Kitima adds clever names to its dishes including Evil Prince, Rambo, and Four Mustketeers.
