The Waverly (joe Espresso)
lovingly named for our first store, the waverly is the vanguard of joe. blended to achieve a balance of body, sweetness, and acidity, no matter what the season, this espresso is perfect as a straight shot or in milk. our most recent combo includes papua new guinea baroida estate, colombia el paraiso, and peru cenfrocafe apukuna.

Peru Ruffino
ruffino adriazola coloque is one of the top producers, quality-wise, in all of cecovasa. his coffee is picked, depulped with a hand-crank device and processed on-site. it is then sent in dry parchment form to the inambari coop, which is itself one of eight members of cecovasa, a union that provides export services to farmers in the sandia valley. inambari coffees have a strong reputation within cecovasa. caturra is the dominant variety for the coop, with some typica and bourbon as well: ruffino's production is comprised of caturra and typica grown at 1850 masl. the farms ferment and wash cherry in the same tanks in a style similar to colombia. since rainfall can be persistent during harvest, parabolic beds provide cover so that the coffees dry evenly.

Burundi
burundi is a tiny landlocked country in central africa whose economy is extremely reliant on coffee. almost 40% of its population is involved with its cultivation and together coffee and tea account for 90% of foreign trade. since its independence from belgium in 1962 burundi has gone through major social upheaval, including a civil war that mirrored the conflicts of rwanda, its neighbor. coffee was sold as a cheap commodity until the industry's privatization in the last decade. since then, intervention from organiza- tions like the world bank and the cup of excellence program have helped lift the quality of the country's coffee dramatically.

Colombia El Paraiso
el paraiso translates to paradise and that pretty much sums up this coffee. it's the product of a 62-member association of small farmers called aprocafeq el paraiso. located in the growing region of huila, near the municipality of tarqui, the association consists of farmers who wash and dry their coffees on their own farms using traditional methods. this coffee comes to us through virmax, the colombian export company that operates several tasting and testing labs throughout the country. they negotiate prices with producers based on quality, so every producer they work with can fetch high prices for their hard work. through a process of consultation and continuous evaluation, virmax collaborates with farmers in the name of better coffee.

always exciting as either brewed coffee or espresso, joe decaf is carefully chosen to fill the decaf drinker with comfort and curiosity. whatever the offering, this selection is balanced in sweetness, acidity, and flavor. this season's decaf is from honduras finco cerra azul. it is decaffeinated using the mountain water method. all orders are roasted on monday, wednesday and thursday and are shipped on the same day. all coffee is delivered whole bean. if you need your order ground, please specify your brew method in the special instructions section.
