Jensen's wild Red King Salmon, also known as the "King of Kings" is the largest and most prized of the wild salmon. Red Kings are what salmon is all about: big, silvery, fighting fish, with rich bright red meat. Red Kings have the highest Omega 3 oil content of all the salmon species. It's the rich oil that gives the Red King salmon its distinct, unmatched flavor. Jensen's Wild Red Kings are troll caught from Alaska's pristine Pacific Waters. Our premium wild Red King is cured in mild salt brine and then slowly smoked using native hardwoods. Our product is 100% natural. The salmon is vacuum packed to seal in the freshness and flavor. It melts in your mouth! Our hot smoked products will keep refrigerated for up to six weeks.
Sockeye Cold Smoke. One of the most valuable and abundant of the wild Alaskan salmon. Bright Sockeye are a deep greenish-blue on the top of the head and back, with silver on the sides and a white belly. They have a deep, red flesh. For its long migration, the Sockeye carries a large amount of fat, which gives the meat a rich flavor. Many people feel the flavor rivals or is better than the King. In the Pacific Northwest it is often cold-smoked and pre-sliced to be sold as Nova Smoked Salmon.
Wild Keta. Jensen's uses only the best wild Pacific Keta salmon, bright and silver with a rich red meat color high in Omego 3 oil. Keta are wonderful salmon with a great price value. Keta Salmon are the most widely produced of all salmon species. Out premium Keta is cured in mild salt brine and then slowly smoked in native hardwoods. Our product is 100% natural with no additives. The salmon is then vacuum packed and sealed for freshness and flavor.
Our salmon jerky is made from wild Pacific sockeye salmon. Great for a quick snack and full of protein. Hearty and delicious with a mild flavor. Does not require refrigeration.
Orders are smoked, vacuum packed, and frozen unless otherwise requested. Ask about our "Low Salt" option. All costs are based on raw (incoming) weight. All custom process orders must be paid in advance. Any orders of 100 lbs or more of the same process will receive a $0.50/lb discount (does not apply to Fresh Freeze). Processing time for custom smoking is typically seven to ten days.
