jack niemann’s black forest steaks, a tradition for nearly half a century. we dry-age our steaks in-house, a process involving specially built cooling rooms (36 degrees in temperature and 70 percent relative humidity) using ultra violet lights and pink salt blocks from the himalayan mountains. dry-aging has become a lots culinary art, while it is the most superior method of aging beef, for flavor and tenderness, it is also the most expensive. our way of dry-aging can only be found in one out of every 2000 restaurants
