There is a saying in New Orleans that for every stove in New Orleans there is a different recipe for Gumbo. Our home-style soup starts with a deep brown roux, then we add onions and celery and slow-cook it for hours to let all of those sultry and savory flavors fall in love with each other. After that, we add chicken and smoked sausage and serve it with a cup of rice on top! One spoonful and you'll fall in love too!
Bourbon Street Chicken
From his time as a jockey riding horses all across Asia, our Founder, Billy Fox, discovered some of the secrets of Asian cuisine and brought those secrets home to Louisiana, adding them into his cooking. Our Bourbon Street Chicken is the love child of that effort. We slow cook chicken in a hoisin sauce untill it is tender and delicious and serve it on a bed of white rice. The perfect dish for those who like it on the mid side. Also great for the kids!
We start by roasting garlic in olive oil, then we add in tomatoes, spices and fresh chicken and slow simmer cook that in beer until it is absolutely perfect. The result is just spicy enough to let you know you are still alive and not yet in heaven. Our most famous and clear favorite dish. This is that one they were talking about
Traditional Creole-style Jambalaya with the trinity (onions, celery and bell peppers), shredded chicken and smoked sausage. Slow-cooked fresh every morning and when it's gone, it's gone!
Red Beans & Rice
Slow cooked Camellia Beans direct from Louisiana served with smoked sausage on a bed of white rice. A "washing day" (Monday) tradition, our beans are saucy with onions and celery and a hint of cayenne pepper, just enough to make you happy! There's nothing better than a big bowl of red beans after a long day!
"First you start with a roux," goes virtually every recipe in a Louisiana cookbook. It's the only way to make an etouffee! Ours is made with a golden roux, onions, celery, and the perfect blend of red, white, and black pepper. Stir in some plump crawfish tails and you have everything you will ever need
So, they said our Drunken Chicken wasn't spicy enough. Our answer is Voodoo Chicken. We slow cook tender chicken in a garlicky tomato sauce with cayenne, crushed red, and black pepper until the chicken can't take it anymore. Don't be fooled, this is a slow burn and not for the feint of heart!
Our Cajun white bean chili is made with onions, celery, freshly chopped cilantro, stewed tomatoes, jalapeno and served with a cup of rice on top! The notes of clove and dill will dance on your tongue and host a party on your palate! Dispelling the myth that vegan food is bland and boring!
Based on the classic Cajun side dish corn maquechoux, our blend of sweet corn, stewed tomatoes and onions is slow-cooked in a sweet and spicy cream sauce and finished with black beans. This dish is the one thing that vegetarians and carnivores agree on: it's incredible!
Chicken Red Hot
Tender chicken stewed with red onions and celery in our tangy, red-hot buffalo sauce loaded with crushed red pepper! Love hot wings but hate the mess? Our Chicken Red Hot was inspired by that very idea! This bad boy will have you sweating from the first to the last bite. We put a little bleu cheese on top to help tame the flame!
A New Orleans twist on the french classic, our stew is loaded with eggplant, zucchini, squash, bell peppers, okra, and stewed tomatoes! From Paris to your pirogue, this hearty vegan dish is perfect for hot summer days or cold winter nights!
Some of our best ideas come from you! The Jean Lafitte is one of those ideas. A pirate's bounty of Voodoo Chicken and Bumble Bee Stew topped with cheddar cheese, jalapeno, and sour cream. It's a treasure in every bite! For those not in the know, Jean and his brother Pierre were notorious pirates that plagued the port of New Orleans in the 19th century. We feel certain they would have stolen bowl after bowl of this dish had we been around back then
It's your choice-our spicy Voodoo Chicken, our everything-but-the-kitchen sink Jean Lafitte, Chicken Red Hot or world famous Drunken Chicken served open-face on fresh bread
