It all began in October 2005 when my sister Kim and her partner Vickie purchased a small ice cream parlor on the island of Siesta Key in SARASOTA FLORIDA. Kim had a full time job so I offered to help out for a little while (haha!). To help boost sales we started baking with spelt as I felt it was a healthier grain. In February 2006, Mrs. Stella Peters, who was visiting the Key from the north, came in and said the baked goods smelled lovely but she couldn't have any because she had just found out she has Celiac Disease. She asked if we could make something for her. Research led to experimenting and then making the choice to become an EXCLUSIVELY GLUTEN-FREE and WHEAT FREE BAKERY!
