Khamtan "Kham" Tanhchaleun rejoined Hawaii Prince in 2005 as its Executive Chef, bringing more than 27 years experience in the food & beverage industry. Most recently, Tanhchaleun was Executive Chef for the Ko'olau Catering Partners at Ko'olau Golf Club and also worked in Chicago, Montreal Canada and the Beverly Wilshire in various positions in the culinary area. In addition to the extensive experience he has received throughout the United States, Tanhchaleun also has traveled abroad several times for educational training in classic and trendy cuisine.
Due to his extensive background in culinary department, Tanhchaleun brings to Hawaii Prince a blend of Eurasian cuisine with an emphasis on freshness and quality of ingredients. His influences on classical and nouveau cuisine have also led him to the "hands on" philosophy that he is bringing to the hotel. Tanhchaleun believes that service should always be the emphasis of any restaurant and that guests should feel as if everything is made to order especially for them. With that in mind, he has changed aspects of Prince Court to include tableside service. Although this may seem like a very aggressive change, Tanhchaleun wants to bring Hawaii Prince back to its roots when "silver platter presentation" was a hallmark of the Prince – and he definitely has the drive to get it done.
