The 150 year tradition of ramen in Japan is rather short, considering the long history of Japanese cuisine. In that short time, many vastly different styles of this delicious dish have emerged, and shops from all over the world interpret these styles to create their own singular offerings. We have done exactly that here at Hai Y'all, created fun and delicious variations of traditional concepts. Our Tonkotsu broth, made with chicken, several cuts of pork, and smoked bacon, is not as cloudy as traditional Tonkotsu, but it's loaded with rich, fatty umami flavor. Our Miso broth is also nontraditional, vegan, made with shiitakes, kombu, a mix of seasonal vegetables, and finished with red and white miso. You'll find it much richer and brinier than any other miso broth out there. Our steamed buns are made with potato flour, an homage to a Martin's potato roll. Our gyoza are handmade and change seasonally. We're not trying to follow an established recipe. We're bbq guys with a pickling habit, and we're trying something new. We hope you like it.

Hearty and briney vegetarian broth made with seasonal veggies, kombu dashi, mushrooms, and red and white miso topped with marinated shiitakes, menma and half a seasoned soft boiled egg. Ask about our gluten free, vegan daikon noodles.
