To Make These Traditional Japanese Noodles, Our Soba Master Skins The Buckwheat Husks, Grinds The Buckwheat, Then Kneads And Rolls The Dough By Hand. The Dough Is Then Delicately Cut To Create The Noodles. Try Some Noodles Alone, Breathe In The Aroma, And Enjoy Its Crisp Taste. Try Dipping The Noodles Into Our Homemade Dipping Sauce (tsuke-jiru). Enjoy The Firmness Of The Noodles In Combination With A Hot Or Cold Dipping Sauce.

Gonpachi serves hand-pounded buckwheat soba noodles, fine sushi, and Japanese grilled delicacies. In addition to these favorites which express Japan's traditional flavors and styles, we have also created a variety of original dishes which incorporate assorted ingredients and cooking styles drawn from the flexible creativity and thinking of our chefs. We prepare fresh soba noodles from buckwheat flour threshed and milled right on the premises. We insist on using the finest Japanese ingredients brought in locally and from Tokyo’s Tsukiji Market. We also have assembled a wide array of rare Japanese sake and shochu that provide a perfect, balanced complement to the cuisine.
