Executive Chef Stefano san re-opened Fuji Grill in the fall of 2010, with a vision of creating Forest Park's finest Japanese dining experience. Trained at variety of well known Japanese restaurants such as Tsunami, Todai & Domo 77, Stefano infuses every dish he creates with his extensive knowledge and passion for perfection. Chef Stefano started his career as a Chef for the Tsunami, a well reviewed restaurant located in downtown of Chicago, Illinois. Once word of his tasty signature dishes got out, offers from many well known restaurants landed on Chef Stefano's plate. Although he had an affinity for the Tsunami, Chef Stefano san knew that greater challenges and opportunities awaited him in Forest Park. In 2007, Chef Stefano san began a career as head chef for the Domo77, IL. He was given room to experiment, and created quite an eclectic menu. However, he never lost sight of his passion for authentic Japanese cuisine. He knew that in order to create the dishes he wanted to share with the world, using only the freshest ingredients available, he would have to establish his own restaurant.
