The Bertucci family had been in the butcher business for three generations and Fred worked s a full time butcher at his father's shop all through college. In early 1981 Fred ventured off and opened a meat market in Westchester, Illinois but contractual problems caused him to sell the business a year later.
In the meantime, Fred married and took a job as a manager at his wife, Denise's, family restaurant. From that moment on Fred could only dream about someday owning his own restaurant.
After work on Friday nights, Fred would head straight to the kitchen and start working relentlessly to create his pizza recipe he hoped he would use when he opened his own place.
